The high-altitude region of Kaffa in southwest Ethiopia, is widely regarded as the birthplace of Arabica coffee, heirloom varieties flourish under natural shade of dense canopies in this biodiverse environment.
Smallholder farmers handpick ripe cherries before delivering them to local washing stations. After pulping within hours of harvest, the coffee undergoes 48–72 hours of underwater fermentation, is washed clean, and then dried on raised beds for 8-10 days before being delivered to Addis Ababa for final processes in readiness for export to us.
