Timor-Leste Sakoko - Espresso Roast
- Choose a store to see local availability
This micro-lot comes from Sakoko, a village in Ermera, cultivated organically in shaded environments.
The Ermera Region, characterised by extensive mountainous terrain ranging from 700 to 2,000 masl., offers ideal conditions for the cultivation of high-altitude Arabica coffee.
Hand-picked cherries from neighbouring farms are meticulously processed at Railaco Station, including floatation to remove lower-density fruit, sun drying on raised beds and patios and subsequent steps like milling, density sorting, colour sorting and hand grading before export preparation.
After gaining independence in 2002, foreign investment in Timor-Leste has revitalised the sector, reinstating coffee as the country's primary cash crop, constituting over 80% of total exports.
Operational since 2008, Railaco Station processes coffee from 100 producers weekly. Staffed by 86 permanent and 150 seasonal employees, it boasts 8 washing tanks.
Workers perform wet and dry milling, drying and meticulous sorting, while waste is repurposed into fertiliser for contributing producers.
Accommodating workers, the washing station provides meals, lodging and 6% employer contributions.
